If I start using NSW, can I change to ASW? Or do I have to stick with the one type always?

No, it is perfectly fine to swap and change between both of them, at any point in time. What is important is that the water parameters are close to that which is being aimed for. This means it has no pollutants present and sufficient levels of things such as calcium, magnesium, specific gravity etc.
